As soon as the hot weather hits, I love blending up a batch of this creamy vegan blueberry ice cream. Between this recipe and my favorite (but not vegan) homemade banana frozen yogurt, I’m officially living my best life all summer in terms of waist-friendly desserts.

This vegan blueberry ice cream is a cool and refreshing frozen treat. And it gets better: it’s good for you, too! This recipe isn’t just dairy-free, it’s also guilt-free in more ways than one. They don’t call it “nice cream” for nothin’.

It’s made by blending together frozen bananas (and sometimes avocados) with different kinds of fruit depending on the flavor you’re after. The result is a creamy, plant-based ice cream that’s light and luxurious, and sugar-free, hence the “nice” in the name. 

There are so many ways to make vegan ice cream at home. You don’t need anything fancy. This delicious blueberry nice cream recipe needs only TWO ingredients: frozen bananas and blueberries.

How to Make Blueberry Nice Cream

  • Blend the ingredients. Before you start, choose 4 ripe bananas and freeze them for at least 2 hours (you can also do this the day before). To make your nice cream base, toss the frozen bananas into your blender along with the blueberries. Puree the fruit into a smooth consistency.
  • Freeze. Scoop the mixture out into a freezer-safe, airtight container. Cover the ice cream and place it in the freezer overnight. I suggest taking this vegan ice cream out of the freezer a few minutes before serving so that it’s easier to scoop.

Anyone can make their own vegan ice cream at home. Keep these tips in mind:

  • An easy way to freeze bananas is to peel them, slice them, and freeze the slices in a single layer on a baking sheet. Frozen bananas are key to this recipe’s creamy texture.
  • If you’re having trouble blending your nice cream, allow the bananas to thaw a little before you blend them. This can help soften them up enough to blend smoothly.
  • For an authentic “ice cream” texture, freeze your blended nice cream for 2-3 hours before serving. 
  • You can use a food processor or blender to make homemade banana ice cream. Both work great. Blenders tend to work a little faster.

Well, yes and no. Since the base of this recipe is banana, it does have banana flavor. However, nice cream tends to take on the flavors of the other ingredients, too, in this case, a generous taste of blueberries.

    This looked so good but I found that amount of bananas overshadowed the blueberries. I can’t understand why people are askking about milk and lemon when the recipe call for only the two ingredients I mentioned. Have I missed something?
