The choice of temperature here helps to create the texture and crust. This recipe is indeed for a breakfast-type cake that’s designed to have a darker crust and a somewhat drier surface, which is achieved by baking at a higher temperature of 400°F. If you prefer to bake it at 375˚F, that’s perfectly fine, but extend the baking time accordingly.
