I love me a good viral TikTok or Instagram trend. With so many people at home these days, we’re getting some viral internet gold. One of my favorites so far has been Dalgona – aka whipped coffee. I’m loving watching the TikTok vids and IG stories of people making it. So, of course I want to share my recipe for Dalgona with you.
Who doesn’t love coffee, and fancy looking coffee in a fancy looking glass at that?! But, the thing that got me so excited about this particular internet craze was that I’ve been making it for years, and us Macedonians simply call it Nes – it’s short for Nescafe, which is a brand that makes instant coffee, the type of coffee that we will use to make this whipped coffee.
What is Dalgona Coffee?
If you find yourself getting sucked into an internet black hole of Dalgona coffee, you’ll see lots of stories of where this whipped treat originated. The most common story tends to place its origin in South Korea in the 1950’s. The name Dalgona comes from a Korean candy that the whipped coffee looks like.
The whipped coffee I know of, and have too much of every summer day, dates back to Macedonia in the late 1950’s. Here, they used instant coffee, sugar, and boiling water and whipped it together until frothy in a cocktail shaker or milkshake machine. It was then poured over ice and milk.
You can think of it like the opposite of a Coffee Frappe where the coffee is on ice in the bottom of the glass and the milk is whipped and spooned on top. Flip that upside down – put the milk on the bottom with ice and spoon whipped coffee on top, and you’ve got yourself Dalgona coffee – aka whipped coffee.
What You’ll Need
There are so few ingredients in this recipe, but make sure to note that we’re using instant coffee. I know not everyone has that around the house so you’ll definitely want to pick some up before trying this out.
Here’s what you’ll need:
- ice
- milk (skim, 2%, almondmilk, etc… are all okay to use)
- instant coffee (do not use regular coffee)
- granulated sugar (you can also use Monkfruit sweetener)
- boiling water
How to Make Dalgona Whipped Coffee
- Prep: Grab two glasses or clear coffee mugs. Add ice halfway up the mugs. Pour your milk into the glass or mug. The milk should come about ¾ of the way up the glass. Set your glasses aside.
- Add: Add instant coffee, sugar, and boiling water to a large mixing bowl. You’ll need a bigger mixing bowl so you have enough room to whisk.
- Whisk: Grab a whisk and vigorously whisk the mixture. It will start to turn a light caramel color. Continue to whisk until it thickens. This should take about 3 to 4 minutes. You’re looking for a mousse-like consistency with strong peaks. You can also use a handheld mixer. Start off on LOW power and then increase as the mixture begins to thicken.
- Serve: Spoon the coffee mixture over the milk. Give it a minute and then gently mix it with a straw or spoon. Serve.
Tips for Success
Okay, I’ve tried this a few ways and I’ve got all the tips you need for the best Dalgona.
- Use instant coffee. I’ve come across a few work arounds if you don’t have instant coffee. Like finely grating the coffee beans and then sifting them before using them. None of these have worked well for me.
- Use a large bowl to whisk. You’ll need the extra space to whisk without splashing over the edge.
- If you don’t feel like whisking, you can use a hand mixer or a frother instead.
- You can also serve your Dalgona warm! All you need to do is nix the ice and slightly heat your milk.
